Christmas is officially over and we may still have a few items left lingering in the fridge from the festive season. Many of us would have over ate, drank and are probably sick of eating the typical Christmas foods. We have made a great recipe for a Left over Thai turkey salad that is healthy and also will exite your taste bud with a different set of summer light zingy flavours.

Serves 4

Ingredients:

For the dressing:

1 tbs grated palm sugar

juice and zest of two limes

1 tbs fish sauce

For the salad:

½ bunch of coriander, stems and roots chopped

1 carrot, grated

2 cucumbers, slice thinly

1 small red chilli, seeds removed and diced

2 spring onions, thinly sliced

1 kaffir lime leaf thinly sliced

350g left over turkey meat

salt and pepper to taste

1 lime cut into wedges

Method:

  1. Mix dressing ingredients together in a bowl until palm sugar is fully dissolved.
  2. Place dressing in a large bowl and then add the rest of prepped salad ingredients. Using your hands and mix thoroughly all together. Serve on a big platter of on separate plates and serve with wedges of lime.
